Abundant flushes here today at Flora Vista in Olympia, WA, USA on their favorite host substrate Alnus rubra. Note the pink tinged margin of young fruiting bodies and overall gray tones throughout. Best harvested when young with incurved margins as a rule of thumb(as with all Pleurotus spp.). I like to fry them battered with egg and rolled in a mix of pulverized saltine crackers and panko. A simple/delicious aoli of Srirach and mayonnaise with garlic powder and a dash cumin is perfect for the light, seafood flavor of P. pulmonarius(and other oysters).
